Singapore Eats: Redpan, Marina Square

I totally did not plan my travel carefully in the last quarter of the year and hence end up with 10 days to clear in the month of December. Well, December is a happy month but it's not really a great month to travel to be honest, it's a peak holiday season and hence, everything from airfare to hotel is expensive. Cry. 

Since it's the best time to stay in the city, let's just enjoy exploring the good scene of foodism in Singapore. This time, we decided to explore the latest expansion of Marina Square and chose to dine at one of the restaurants there, Redpan. Redpan is the result of collaboration between DP Architects, a local architecture firm, and GRUB, a young Singapore culinary company.

While I totally know nuts about design (although I have my own personal taste of design for some things, I suppose), Redpan serves a rather interesting food in their restaurant. The concept of playing with local ingredients to create modern dishes is something that I am pretty game about. For example, instead of ordering the usual truffle fries, my dinner buddy and I decided to go for Char Siew Chilli Fries, fries with a homemade char siew ragout with jalapeƱo and salsa (SGD 7).

The next dish that we ordered is also another combination of local and modern cuisine, Prawn and Ebi Hiam Pasta (SGD 17). Ebi Hiam is dried shrimp and mostly use as garnish to a lot of rice and noodle dishes, and even stew. The pasta is cooked al dente. I love this combination of flavor given by the juicy shrimp, savory ebi hiam and the fragrant pasta.

Not sure how did the next dish gain its name, Temasek Chicken Chop (SGD 14) is a grilled chicken steak with homemade mushroom gravy. I think this dish is the least playful dish that we ordered so far but at least, if the other two dishes are risky, we have something safe to fall back on...the chicken chop. LOL. I wonder if Temasek really played any part in the creation of this dish.
